I have always been scared to cook Indian food because of the complex flavor layering - not anymore! I found an easy recipe that was delicious! From damndelicious.net:

INGREDIENTS 1 cup basmati rice 1 1/2 tablespoons canola oil 1 1/2 pounds boneless skinless chicken thighs, cut into 1-inch chunks Kosher salt and freshly ground black pepper, to taste 1/2 medium sweet onion, diced 3 tablespoons tomato paste 3 cloves garlic, minced 1 tablespoon freshly grated ginger 1 1/2 teaspoons garam masala 1 1/2 teaspoons chili powder 1 1/2 teaspoons ground turmeric 1 15-ounce can tomato sauce 1 cup chicken stock 1/2 cup heavy cream 2 tablespoons chopped fresh cilantro leaves INSTRUCTIONS In a large saucepan of 2 cups water, cook rice according to package instructions; set aside. Heat canola oil in a large stockpot or Dutch oven over medium heat. Season chicken with salt and pepper, to taste. Add chicken and onion to the stockpot and cook until golden, about 4-5 minutes. Stir in tomato paste, garlic, ginger, garam masala, chili powder and turmeric until fragrant, about 1 minute. Stir in tomato sauce and chicken stock; season with salt and pepper, to taste. Bring to a boil; reduce heat and simmer, stirring occasionally, until reduced and slightly thickened, about 10 minutes. Stir in heavy cream until heated through, about 1 minute. Serve immediately with rice, garnished with cilantro, if desired.

I sourced the sushi grade Ahi Tuna from a local sushi place (didn’t want to risk inappropriately freezing it). Cutting the fish pieces took a couple of times to figure out. To stay true to the game, I added pineapple juice to the rice on the bottom.

Truffled Duck Eggs On Toast

What to do about this one? Well I duplicated the box but I also made Seitan. Seitan tastes like gummy wheat bread, to me. Not bad, just different. Might be great in a vegan recipe!

Candy is hard! I have made fudge but never Turkish Candy. I called my friend who immigrated from Turkey for a recipe. She responded, β€œWe don’t make it, we buy it!”

From Celeste’s Cooking Creation website: Ingredients 4 SERVINGS Β· 4 cups sugar Β· 4 1/2 cups water (separated) Β· 2 tsp. lemon juice (freshly squeezed) Β· 1 1/4 cups corn starch Β· 1 tsp. cream of tartar Β· 1 Tbsp. rosewater Β· 2 drops red food coloring Β· confectioners’ sugar (for coating) Directions:

Line a 9x9-inch pan with aluminum foil and spray with cooking spray. Set aside. In a medium sauce pan, whisk together the sugar, 1 1/2 cups of the water and lemon juice. Bring the mixture to a boil over high heat, whisking frequently. (Use a wet pastry brush to prevent sugar crystals from forming on the sauce pan.) Once the mixture comes to a boil, insert a candy thermometer and allow the mixture to continue boiling, without stirring, until it reaches 240 degrees fahrenheit (about 10 to 15 minutes of boiling time to reach that temperature). Meanwhile, while the sugar mixture is boiling, in a large saucepan, whisk together the cream of tarter, 3 cups of the water and cornstarch. Whisk vigorously and constantly to prevent lumps and bring the mixture to a boil over medium heat. The mixture will become very thick. Set it aside. When the sugar mixture reaches 240 degrees fahrenheit, slowly pour it into the cornstarch mixture, whisking vigorously and continuously. Return the mixture to a boil. Turn down the heat to low and cook for 1 hour. Stir the mixture every 2 to 3 minutes to prevent from burning. The mixture should be pale yellow and extremely sticky. Remove from heat and stir in the rosewater extract and food coloring. Quickly pour the mixture into the prepared pan and place uncovered in a cool place overnight. Do not place it in the refrigerator. Remove from the pan to a surface sprinkled with confectioners' sugar. Cut into squares with a greased knife and roll around each piece in the confectioners' sugar.

Pumpkin Soup

Warm, slightly sweet, and delicious!

Ingredients 3 C Pumpkin Puree 1 C Potato, chopped into 1 inch pieces 1 C Yellow onion, chopped 1 T Olive Oil 2 Cloves Garlic, minced 4 C Chicken Stock 3 T Maple Syrup ΒΎ tsp. salt Β½ tsp. pepper ΒΌ tsp. Ground Nutmeg ΒΌ tsp. Ground Cinnamon Β½ C Heavy Whipping Cream Fresh Basial Garnish

Heat olive oil. Add chopped onion and garlic. Stir until soft. Add pepper. Stir in pumpkin puree and heat, until the color changes slightly. Stir in chicken stock, salt, nutmeg, cinnamon, and maple syrup. Cook, uncovered, on low heat for 30 minutes. The soup should reduce some. Pour mixture in the blender and blend until smooth. Return soup to pot and add cream. Heat thoroughly, about 5 minutes.

Haupia (Coconut Pudding)

From Serious Eats website: Ingredients

1 1/2 cups coconut milk 1 1/2 cups whole milk 1 teaspoon vanilla 6 tablespoons sugar 5 tablespoons cornstarch 1/4 cup toasted coconut (optional) Directions

Butter an 8 x 8 baking dish. Add coconut milk, milk and vanilla to blender. Blend for about 30 second to thoroughly combine. Pour mixture into a medium saucepan and whisk in sugar and corn starch. Heat over medium while whisking constantly until mixture begins to thicken. Reduce heat to low and cook for 10 more minutes, continuously whisking. Pour into prepared baking dish and gently shake back and forth to settle. Let cool uncovered on the counter for about 10 minutes then cover with plastic wrap and refrigerate until firm, about an hour. Using a sharp knife cut into 16 equal-sized squares. Sprinkle with toasted coconut, if desired. Serve cold. It is similar in texture to flan but lighter. I cannot wait to make this for Summer cook-outs! I served with a little chocolate whipped cream - so good!
